What Makes this Stuffed Pepper Recipe Paleo-Friendly?
The key is using whole, unprocessed ingredients that align with paleo guidelines, which means no grains, dairy, legumes, or processed additives. Traditional stuffed peppers often include rice, cheese, or beans, which are not paleo-approved. Instead, this version swaps in ingredients like cauliflower rice and extra veggies for bulk and texture.
A healthy fat like avocado oil can be used for cooking. Additionally, you will want to ensure the cans of tomato sauce and diced tomatoes are paleo-compliant. By focusing on nutrient-dense, real foods, paleo stuffed peppers offer a satisfying, well-balanced meal that supports digestion, energy, and overall health.
Paleo Stuffed Peppers Ingredients
- 4 bell peppers in the color of your choice
- 1 lb ground turkey or beef
- 1 can compliant diced tomatoes
- 1 small can compliant tomato sauce
- 1 cup sliced mushrooms
- 1 cup cauliflower rice
- ½ onion diced very small
- 1 tsp minced garlic
- ½ cup shredded carrots (optional)
- Italian seasoning
- Salt and pepper
Instructions
- Preheat the oven to 375 deg F.
- Cut the peppers tops off and take out all the seeds and membranes.
- Line a baking dish with foil and spray with avocado oil spray.
- Put the peppers in the baking dish and bake for 15 minutes.
- Sautee onions and carrots for about 5 minutes.
- Add the garlic and sauté for another minute.
- Add the mushroom and sauté for another two minutes.
- Remove the mixture and set aside.
- Brown your meat in the same pan until fully cooked.
- Add all the ingredients to meat and mix well for about 3 minutes until warm and combined.
- Take the peppers out of the oven and use a spoon to stuff the peppers with the mixture.
- Take a bit of the tomato sauce and pour on top of each pepper just over the top.
- Sprinkle everything generously with salt and pepper.
- Bake again for 15-20 minutes. Or until the peppers outside begin to bubble a bit and are tender.
