Paleo Bruschetta Chicken Ingredients
- 3 large chicken breasts, sliced in half
- 1/4 cup olive oil or avocado oil + 2 Tbsp
- 3 Tbsp balsamic vinegar
- 3 cloves garlic minced (divided)
- 1/2 tsp salt
- 3 cups diced sweet potato
- 2 cups sliced cherry tomatoes
- 1/3 cup chopped fresh basil
- Salt & pepper to taste
Instructions
- Preheat the oven to 350 deg F and line a sheet pan with foil. Spray with avocado oil spray.
- Whisk together the vinegar, oil, garlic, and salt and then pour over the chicken. Turn the chicken and make sure the mixture is all over it.
- Toss the sweet potatoes with some oil, salt, and pepper.
- Place the chicken and sweet potatoes on the pan and bake for 25-30 minutes (this may vary depending on the thickness of the chicken).
- Mix tomatoes, basil, and two gloves of garlic.
- Serve the chicken with the tomato mixture on top.
