Whole30 Pork Tenderloin Ingredients
- 1 lb pork tenderloin
- 2 Tbsp mustard powder
- 1 Tbsp paprika
- 1 Tbsp onion powder
- 1 Tbsp garlic powder
- 1 ½ tsp salt
- 1 ½ tsp black pepper
- ½ cup chopped walnuts
- 3 cups salad greens
- ½ cup homemade balsamic vinaigrette (directions below)
For the vinaigrette dressing:
- ¼ cup balsamic vinegar
- 2 cloves garlic
- 2 tsp mustard powder
- ¾ cup extra virgin olive oil
- 1 tsp minced cilantro or ¼ tsp dried
- Salt and pepper
Instructions
- Remove the pork from the fridge about 30 minutes before cooking.
- Preheat the oven to 375 deg F.
- Pat the tenderloin dry with a paper towel.
- Mix mustard powder, paprika, onion powder, garlic powder, salt, and pepper in a small bowl.
- Rub the pork evenly with the mixture.
- In a food processor chop the walnuts until finely chopped.
- Coat the pork evenly with walnuts.
- Roast the tenderloin for 25 to 30 minutes in the oven.
- Slice and serve on top of mixed greens and drizzled with homemade balsamic vinaigrette.
For the vinaigrette dressing:
- Mix together the vinegar, garlic, and mustard powder in a small bowl.
- Add the olive oil in steady stream while whisking.
- Add cilantro and salt and pepper to taste.
- Whisk again and serve.
